Spirit of Hven comes from a place that sounds like it belongs in a Nordic saga: the island of Hven, a tiny landmass sitting in the strait between Denmark and Sweden. The distillery there produces whisky, vodka, and this remarkable organic gin, which is both pot-distilled and oak-matured — an unusual step for gin that speaks to the whisky-making heritage of the operation. The botanical bill reads like a tour of the world's spice routes: grains of paradise, Guinea pepper, Sichuan pepper, calamus root, Mauritian Bourbon vanilla, alongside more conventional cardamom, cassia, and citrus.
It is a gin that wears its exoticism openly, and the question is whether all these disparate influences cohere into something harmonious or merely create an interesting muddle.
The Distillery
Spirit of Hven Distillery is a small operation on the island of Hven, producing organic spirits from grain spirit that is infused with botanicals for a full 24 hours before distillation in their unique copper pot stills. The organic certification extends to every botanical, and the brief oak maturation after distillation adds a subtle woody dimension that most gins lack. The combination of extended maceration and oak contact creates a spirit that has more in common with aged genever than with a typical London Dry.
Tasting
The nose is fascinating and unlike almost any other gin. Wet juniper provides the foundation, but it is immediately accompanied by bitter citrus rind and an intriguing suggestion of petitgrain — a citrusy, floral note more commonly associated with perfumery than gin. Rose water, sage, and sandalwood create a perfumed, almost incense-like aromatic, while lavender and white pepper add floral lift and spice. It is a nose that transports you — not to a British hedgerow but to a far eastern spice market.
On the palate, there is a slight touch of vanilla creaminess on the tip of the tongue — the Bourbon vanilla and oak maturation making their presence felt. The flavour evolves rapidly, with lemon providing brightness before peppery cubeb and grains of paradise assert their warm, spicy character. There is a fair hit of warmth, and the back of the palate carries gentle hints of wood and grain that speak to the oak maturation. It is lively and engaging, with the botanical complexity unfolding over several seconds of tasting.
The finish is surprisingly long. Black peppercorn dominates — a warm, persistent spiciness that lingers well — with the slightest hint of anise and liquorice adding sweetness at the edges. There is a note of cut hay that speaks to the grain spirit's organic origins. The finish has a smoothness that the oak maturation almost certainly contributes.
How to Drink It
Spirit of Hven is a gin for contemplative drinking. Neat, at room temperature, it reveals its full complexity — the exotic spice notes and oak influence emerge fully when the spirit is not chilled or diluted. In a G&T, use a premium Indian tonic and garnish with a thin slice of orange and a few cracked peppercorns — the spice amplification is extraordinary.
