The wildflower honey at 57% ABV is generous and distinctive but it makes the gin feel a bit sweet for a navy strength. The piney juniper and dried chamomile are lovely but the honey note dominates the finish for me.

The dried chamomile on the nose is an unexpected and lovely note. At 57% ABV the dense piney juniper is commanding, the honey adds sweetness, and the lemon zest provides essential brightness.
